Fresh tomato sauce

First find ripe tomatoes, usually mom uses Roma, this time we used Jersey. Make sure they are ripe. Pour boiling water over them to loosen up skin and peel them . Blend in blender. Will become frothy but this will soon cook out and reduce. 2 whole chopped onions go in as well . Put a lot of chopped garlic I used 15-18 cloves for big pot. Add kosher salt and black pepper to taste. I like to add dry dill. It brightens the sauce. And a finger nail full of baking soda will reduce acidity . Reduce and use on all kinds of good stuff . I’m on a zucchini spiralizer kick right now, but I had some as a soup… Mmmm.
