Not my best picture, but most tasty , took Ezekiel tortillas and boiled a large sweet potatoe. Mashed and spread it on one side liberally , added nutritional yeast with salt and pepper. Then heat a green pan ( non stick) on medium . Toasted the tortilla till golden brown with no oil . Added guacamole and a fantastic salsa.  Normally I would garnish with cilantro and and tomatoes or at least a fresh pico , but I was starving.
