Chickpeas Galore

Mom helped me convert her oil laden recipe to a plantStrong masterpiece 

Seer-ka-neese Rice Dish 

15 0z chickpeas

1- cup peeled and diced carrots

1.5- cups organic brown rice

Heaping teaspoon cumin

Kosher salt and pepper to taste 

1/2 large grated onion

Onion powder

4 cloves Fresh minced garlic 
Place chickpeas carrots and rice in pot with appropriate amount of water for the rice you are using. Make sure to drain and rinse chickpeas . Cover tightly and cook for 45 minutes in my case for Texmati rice . Check frequently and stir as hot yo burn rice on bottom of pot. When most of the liquid is gone toward the last 15 minutes add seasoning and garlic.

Salad

  • Bok Choy
  • Dino kale
  • Avocado
  • Lemon juice from one lemon
  • Bell peppers 
  • Kirby cucumber
  • One tomato
  • 5 slices of sundried tomato
  • Hand full of chickpeas 
  • Green onion 
  • Parsley 

Tame the kale with lemon and kosher salt    Add other ingredients and enjoy
